Parsley, spinach, kale and walnut pesto

Ingredients:

1/2 bag each of - hamlin road farm spinach and kale - cut stalk ends off the kale

3-4 large garlic cloves chopped

organic olive oil - 1/2 cup

1/2 cup of toasted walnuts seeds

Grated Parmesan around 50gm

lemon or lime juice

salt to taste

 

Method:

§  using a stick blender blend the organic spinach and kale,1/2 cup olive oil and garlic until all but a smooth mix

§  add the toasted seeds and blitz

§  add parmesan, salt to taste and the juice of 1/2 a lemon or lime and blitz again, add more oil if required.

§  put in the fridge till ready to serve or else place in a container, cover the top with olive oil and freeze.

§  delicious served with hamlin road organic farm - salad    mix with petals or slice organic farm carrots and radish into thin crackers.
