Chickweed, spinach, rocket and nasturtium leaves pesto

Ingredients:

1 x bag of Hamlin road farm organic chickweed, rocket, spinach and nasturtium leaves blend

3-4 large garlic cloves chopped

Organic olive oil - 1/4 - 1/2 cup

1/2 cup sunflower seeds - toasted

Parmesan

Lemon or lime juice

Salt to taste

 Method:

§  using a stick blender blend the organic mix, 1/4 cup olive oil with garlic, until all but a smooth paste

§  add the toasted sunflower seeds and blitz

§  add parmesan, salt to taste and the juice of 1/2 a lemon or lime and blitz again adding more oil if needed.

§  put in the fridge till ready to serve or else place in a container, cover the top with olive oil and freeze.
