Lime and Thyme Shortbread
Ingredients
- 250gm butter softened
- 1 cup of icing sugar
- 1 cup cornflour
- 2 cups plain flour
- Grated rind of 1 lime
- Fresh thyme – 3 Tablespoons
Instructions
- Cream butter and icing sugar until light and fluffy
- Stir cornflour and flour together
- Mix sifted ingredients into creamed mixture
- Add grated lime rind and thyme
- Knead well
- On lightly floured space roll out to 0.5cm thickness
- Shape or cut to size
- Place on a greased oven tray, prick with a fork
- Bake at 150oC for about 30 minutes
